Optimization of Threadfin Bream (Nemipterus sp.) Protein Hydrolysate Using Response Surface Methodology Analysis

Abstract Threadfin bream ( Nemipterus sp .) is a demersal fish that widely distributed in Indonesian waters. Protein content of 16.85% and fat 2.2%. High protein low-fat make potential as raw material for hydrolysate. The purpose this study was to determine the effect differences papain enzyme concentration, temperature, duration hydrolysis process on degree optimal time using Response Surface Methodology. Data analysis carried out by testing hydrolysis, content, water content. processing Box Behnken Design Methodology method. supported Expert 11 software. recommended model quadratic model. results optimization solution were concentration 5.833%, temperature 55.833°C within 6.967 hours with desirability 1. Verification according gave 48.52%. verification obtained are accordance predictions 11. sample highest tested protein, water, resulted 26.48%, 41.38%, 0.75%.
